As the days get hotter here in Northern California, we find ourselves spending more time outside, enjoying the summer sun. Family gatherings, days spent poolside, and let’s not forget the amazing food! As the temperature heats up, so do the grills. Nothing else completes a great summer meal without some home cooked bbq and a fresh summer salad! Summer salads are bright, colorful, and refreshing and we’re about to show you one of our favorites. Not only is it flavorful, but extremely easy to put together. Here is our Super Simple Summer Salad Recipe.
It all began one night, when Ashley and I were debating on what to have alongside our bbq steak dinner. We usually go with a side of corn and pasta, or a combination of fresh vegetables, but we thought that creating a light, fresh summer salad would be a great combination and a healthier alternative than the carbs of a pasta. The summer salad we came up with is a combination of fresh crisp flavors, bright colors, and a little juiciness.
Our Simple Summer Salad Recipe
We start it with adding generous handfuls of spring mix to a large salad bowl. Then we add cherry tomatoes and cucumbers to make it hearty. Here in California, we love avocados and we put them on just about anything from burgers to tacos, but what they really add volume to is salads! So along with our spring mix, tomatoes, and cucumbers, we add avocado. Don’t get me wrong, with just those four ingredients you can make a good salad, but we felt like there was still something missing. The last thing we add to this amazing bright summer salad to give it the final touch is a flavorful citrus fruit known as mandarins. Mandarins pack just enough of a juicy, citrus pop that won’t overpower the rest of the salad.
Now, of course you can’t have a salad without a good dressing, so we found that the perfect pairing to this summer salad is a red wine vinaigrette, but of course it can be up to personal preference. We like to toss the dressing in before dishing out our servings, but if everyone has different tastes then it’s really convenient to have these little sauce cups handy for individual portions. They even have lids if you’re taking salad on the go!

This has become our go-to salad to accompany just about any dinner we make. It’s so fast to put together and on top of that, it has some serious flavor. I can’t get enough of this salad. It’s healthy, yet absolutely delicious. Not to mention, it pairs well with so many different dinner dishes!
Super Simple Summer Salad
Ingredients
- 8 Cup Spring mix
- 1 Cucumber Sliced and quartered
- 1 1/2 Cup Cherry tomatoes Cut in half
- 2 Avocados Diced
- 1 Mandarin Each slice cut into thirds
- 1/4 Cup Red wine vinaigrette
Instructions
- Put spring mix in a large mixing bowl
- Add cherry tomatoes, cucumbers, avocados, and mandarins to the bowl
- Add red wine vinaigrette to the bowl and thoroughly mix until all ingredients are evenly coated
